Pictures on the wall, a neighboring table, and the hotel's handwritten dish name are all legitimate ways to order. You are not supposed to already read a menu.

Say if you cannot eat chili before the order, not after a red bowl arrives. In Chengdu and Chongqing the default is hot. Mild is a request, not the house style.
